It is not the same as the trim fat that comes off the rest of the carcass, and the difference shows up in the finished balm.\u003c\/p\u003e\n\u003cp\u003eMost tallow products are rendered from mixed trim — whatever fat the butcher has. Suet renders down whiter, cleaner and with less residual odor, and it sets firmer at room temperature without any added hardeners.
